Dairy Free Butterscotch Sauce
If you have never made a butterscotch sauce from scratch you are missing out! I am so excited to be blog contributor over at Around My Family Table. Becoming a contributor has become the perfect opportunity to stretch myself baking allergy friendly desserts. Gluten Free, dairy free and egg free desserts can be very challenging. But it gives me a wonderful opportunity to explore different ingredient options. It’s interesting while developing this recipe I had countless flops, frustrations and moments where I wanted to quit. If the recipe had been for my own blog post I am sure I would have given up. But there is something about a deadline on another blog that kept me forging ahead and I am so glad I did.
While you can use vegan butters for the base of a dairy-free butterscotch sauce, I found that it gave the butterscotch a weird after taste. On the other hand coconut oil is the perfect base for this rich and luscious butterscotch sauce. While it takes some time to make, it is well worth it. I paired it with vanilla bean coconut milk ice cream. Yum!
My first blog post that I shared at Around My Family Table was a dairy free, egg free and gluten-free espresso and sea salt cookies. They are not overly sweet and pack a punch of espresso, so my advice don’t snack on them late at night!
