Movie Night Desserts
What’s your favorite movie night desserts? I like to keep simple. The problem is, in my family, everyone’s “favorite” is a little different. Once in awhile, I like to go all out and have a little something for everyone. Our latest movie night desserts were quite the hit. My inspiration for our movie night desserts started when I was reading a blog post by Created By Diane. Earlier this week, my son and I, were scrolling through instagram when we stumbled upon her awesome looking cookie cakes. For those of you who do not know, chocolate chip cookies are my son’s all time favorite dessert. Turn them into a cake and he gets a tad giddy. He starts saying things like, “Mom, did you know you are the greatest mom?” Or my personal favorite, “Mom, I just love you, I am so happy God chose you to be my mom.” Who knew? A simple chocolate chip cookie brings out the love in my child. I have a feeling one day he is going to try to convice his bride that she wants Diane’s larger version of the cake, as a wedding cake.

Since my son was doling out the compliment smorgasboard, I decided to go a little crazy with his cookie cakes. Jude’s favorite topping salted caramel. For our movie night desserts I decided to experiment with an American Buttercream Salted Caramel.
Salted Caramel Frosting {Printable Version}
6 oz. Unsalted Softened Butter (about 20 minutes out of the refrigerator)
2 1/2 Cups Powdered Sugar
¼ Teaspoon Sea Salt
1 Tbsp. Half and Half
1 Teas. Vanilla Bean Paste
½ Teas. Pure Vanilla
½ Teas. lemon juice
Caramel Sauce to taste
Directions:
In a stand mixer, fitted with a paddle attachment, cream the butter & salt for about 2 minutes and then add half of the powdered sugar and the half and half to the butter and beat again until combined. Scrape down the bowl. Add the rest of the powdered sugar, the vanilla, and the lemon juice and beat until combined. Scrape down the bowl again.
Caramel Sauce: You can either make your favorite caramel sauce or you can buy your favorite brand. If you are not going to make fresh, I would suggest Trader Joes Caramel Sauce or Ghiradhelli’s. Add the caramel sauce till it is slightly swirled.
Beat on high speed for 5-6 minutes or until the frosting is fluffy. Place in a pastry bag with the tip of your choice.
Assembly :
1. Take a larger chocolate chip cookie for the bottom and pipe a swirl of frosting.
2. Drizzle some caramel on top
3. Sprinkle Pink Himalayan Sea Salt on top.
4. Repeat steps 1-3 on the next layer.
5. On the top layer place some chocolate chips
For our movie night desserts I found these fun popcorn buckets at World Market. You can either buy them in the smaller cone sizes or the bowl. Since we had a few people coming over, I divied up the popcorn into individual bags and tied them up. My favorite popcorn to use is from Trader Joes. I am big fan of non-genetically modified corn. I promise I will not get on my soap box today about genetically modified foods. If you like buttery tasting popcorn just do what I did. Place the popcorn in a bowl drizzle with real butter and then shake sea salt on the top. It’s delicious and no chemicals!

I just LOVE salted caramel and just happen to have some salted caramel frosting left over from some cupcakes I made, guess I’ll just have to make some more cookies to slather it on, yours look DE-licious!
